Yes, I know, the photo I took does not have olives, but I did add them and chow down after taking the picture.
First taste was a bomb of flavor. This recipe is not bland .. in fact, it is a "taste bonanza". Trust me you, is SpeedyCat Hollydale says taste bonanza, it is an explosive plate of bird.
Please note, I can take NO credit for the preparation of this meal, because I was napping when it was cooking. I simply showed up for the eatin`. Anyhoo, lets get down to business and let you know how YOU can have this same incredible edible plate of meat and rice.
Preheat oven to 400 degrees. Combine first seven ingredients and marinate for 30 minutes. THEN pour marinade into a skillet an burn on medium-high heat. Add chicken and cook each side 3 minutes or until browned. Now REMOVE chicken from pan and add onions - cook till browned as well. Now you are ready to bake. Arrange onions and chicken pieces in a roaster pan and sprinkle with salt and pepper. Top with olives and lemons then bake for 35 minutes! Ohhhh yes I can still smell the aroma from the kitchen. My sweetie looks extra hot too ( you don't have to kiss the cook BUT I DID ). Now for the final step! Remove chicken and onions from dish, and strain remaining sauce. Bring to a boil and saute` till slitly thick. Stir in the olives then add to chicken mixture. Top with cilantro and place lemons and onions strategically in a visually pleasing way and VOILA !!! Time to eat. I will do the dishes :-)
